Lime Sherbet

Josh isnโ€™t a big fan of sweetsโ€ฆso he says. This week we made a lime loaf cake (based on the lemon loaf cake we made awhile ago) and we churned up some lime sherbet. Josh canโ€™t stay out of the freezer! He loves it! Now he says, โ€œwell I guess I like sweets, I was always eating the wrong kind!โ€

Tart desserts are his favorite and this sherbet is super tart. The texture is very creamy and it is such a refreshing dessert. If you donโ€™t like things very tart, donโ€™t put in as much lime juice. Serve lime cake on the side and you will be in lime heaven!

*To make the cake, use limes instead of lemons! I also added in lime zest into
the glaze this time.**





Lime Sherbet

Adapted from A Passion for Ice Cream, Emily Luchetti

1 ยฝ cups sugar
ยพ cup water
2 T light corn syrup
1 ยฝ cups freshly squeezed lime juice
Large pinch of kosher salt
ยฝ cup milk
ยฝ cup whipping cream

Stir together the sugar, ยผ cup water, and the corn syrup in a medium saucepan. Bring to a boil over medium-high heat and cook, stirring occasionally, until the sugar is dissolved. Remove from the heat and let cool to room temperature. Whisk in the remaining ยฝ cup of water, lime juice, salt, milk, and cream. Refrigerate until cold, at least 2 hours or overnight. Churn in an ice cream machine according to manufacturerโ€™s instructions. Freeze until scoopable, about four hours.

  1. Before we got married, my husband was never a sweets person. Well, I guess I changed that with my baking because now he loves most everything I make! Some good, tart, lime sherbet sounds amazing!

  2. Oh, I adore lime! I canโ€™t believe he thought he didnโ€™t love sweets. I would kill to not love them, I am a slave to them!

  3. Maria! We are on the same wavelength, I posted my Mojito cake (lime) on 9/12 which is a version of a lemon cake. You commented that you love lime, me too.
    Youโ€™ve definitley got me on the baking skills though, I use short-cuts. haha
