Recipe for Oatmeal Berry Muffins

Breakfast is the most important meal of the day. It is true, not just an old wives tale. A lot of people think that skipping breakfast will help them lose weight, but WRONG! You need to eat in the morning to refuel your body and jumpstart your metabolism. Skipping meals usually leads to overeating later on in the day anyway. So do yourself a favor and eat breakfast!!
If you are short on time or donโt know what to eat, I have a solutionโฆOatmeal Berry Muffins! I adapted these from Joy the Baker. They are healthy muffinsโฆbefore you start whining, listen:)
These muffins are healthy AND delicious. I used whole wheat flour, oats, and applesauce. The texture is wholesome and hearty..in a good way:) I also added in cinnamon, vanilla, and almond extractโฆthree of my favorite flavors. And now for the berriesโฆI used frozen raspberries, blackberries, and blueberries, these muffins are bursting with berries. Biting into a muffin caused an explosion of berry goodness in my mouthโฆYUM!
I put some of the muffins in the freezer so I always have a healthy breakfast, even when I am in a rush. Just heat them up and enjoy!! Please start your day off right by eating breakfast. You will feel much better, especially if you eat one of these muffins!
Adapted from Joy the Baker
- 1 ยผ cups whole wheat flour
- 1 ยผ cups oats
- 1 tsp baking powder
- ยฝ tsp baking soda
- ยผ tsp salt
- ยฝ tsp cinnamon (I used 1 tsp.)
- 1 cup unsweetened applesauce (I used chunky applesauce)
- ยฝ cup low-fat buttermilk
- ยฝ cup firmly packed brown sugar
- 2 tbsp canola oil
- 1 large egg, lightly beaten
- 1 tsp. vanilla (I added this)
- ยผ tsp. almond extract (I added this)
- ยพ cup blueberries, fresh or frozen (I used frozen raspberries, blackberries, and blueberries. I put in a full cup)
Preheat oven to 375 degrees.
Line a muffin tin with paper cases or spray with nonstick cooking spray.
In a large bowl combine flour, oats, baking powder, baking soda, salt and cinnamon. In a medium bowl combine applesauce, buttermilk, sugar, oil, egg, and extracts. Make a well in dry ingredients and add applesauce mixture. Stir until just moist. Fold in berries. Fill muffin cups 2/3 full. I got 16 regular muffins.
Bake for 16-18 minutes.
Cool on rack. Enjoy! They freeze beautifully too!

I canโt survive without breakfast! I love the burst of berries in your muffins. Iโm going to add oatmeal the next time I bake muffins.

Nifty idea to keep โem in the freezer, I donโt think Iโve done that before! Very cool, oatmeal in a muffinโwho needs a bowl :P.

Oh and youโre totally right about skipping breakfast. I never understood why people think to skip it?? Itโs like trying to start a car with no fuel. At least we have the knowledge to share with others. Ok so for being the nerd that just posted twice.

I made these with a few alterations: no almond extract and I used a cup of a combo of fresh strawberries and blueberries. Overall I was pleased with how they turned out and look forward to experimenting with other random berries and nuts too.

I used a pint of fresh blueberries, steel cut oats, non-chunky applesauce and omitted the almond extract (I was out of it) โ these were fantastic! Love them! I will definitely be making them again!
I came across your blog when I was craving something bread-y, haha. I was so desperate to try them that I made my own applesauce because I was currently out of the jarred stuff. I didnโt add oil, lessened the amount of brown sugar, and no almond extract (I will buy some and try it next time). The best partโฆ.I froze some for later!

I made these the other night. I thought they were very good for a healthier muffin recipe โ something Iโll be adding to my everyday recipes. I used all blueberries and think they would be even yummier with raspberries to add a little bit of tartness to round out the flavors, but then again thatโs how I like my oatmeal best. Everyone (Myself, hubby, & 5 kids) all seemed to enjoy them โ my 9-year old daughter has declared them one of her favs. Oh, and P.S. Youโre right, they do freeze beautifully.

I just made these and they are AMAZING! I think even better than the similar Great Harvest muffin that I get almost daily. I did make larger muffins, dividing the mix amongst 12 wells. Even when I did that, each muffin is only 4 WW points! Too good to be true! Thanks so much for the recipe!
Iโve been making these all the time since I first tried the recipe out with my sister about a year ago. I add more berries and a real apple each time. My nephew just learned to say my name and its usually followed by โmuffins?โ because he loves them so much ๐ thanks so much for the awesome recipe!!!
