This recipe has my name all over it and thatโ€™s why I chose it as another recipe to share from Better Homes and Garden. I just made two easy additions to the original recipe that makes it even more delicious: artichokes and roasted red peppers. They are my favorite!

I love eating fruits and vegetables. They are a big part of my familyโ€™s life and we eat a lot of them with every meal. Incorporating so many delicious and good for your ingredients helps us feel good about what we are eating and gives our bodies the fuel to take on each dayโ€ฆespecially when most of it includes chasing after a very active two year old! Cheesy bread with sautรฉed veggies feels like an indulgence without leaving you feeling guilty.

Sometimes it can be hard to think of new ways to serve and prepare vegetables. Toasted bread is the perfect plate for loads of great toppings and thatโ€™s why this recipe works so well. When preparing my vegetables for this recipe I added ยฝ cup of quartered, canned artichokes packed in water and ยผ cup sliced roasted red pepper also packed in water to the last minute of cooking. That way they had a chance to heat through with the rest of the vegetables without falling apart in the heat.

The roasted red peppers are a sweet addition to the rest of the vegetables and have a nice smoky taste. The artichokes are very mild in flavor and the smooth texture compliments the warm creamy cheese. I love the idea of adding sautรฉed vegetables to cheesy toast and I think the addition of the artichoke hearts and peppers is perfect!

These toasts are substantial for your family or friends to eat with out having to go to too much trouble or fuss making them. They only take a few minutes to prepare but itโ€™s a meal that is teaming with flavor and one you donโ€™t have to feel guilty about eating.

  1. It sounds yummy and looks so healthy too. I am always trying to think of ways to eat more vegetables and this is great as because of the cheese itโ€™s comforting too.

  4. I just stocked up on plain and fancy (marinated) artichoke hearts at Costco for my โ€œend of sled hockey seasonโ€ Costco run. [Costco is about an hour away from home, but the sled hockey rink is only 7 minutes away from Costco, so while my son is on the ice Iโ€™m shopping.] This looks like a delicious way to enjoy farm share veggies in the spring.

  6. Okay I have to knowโ€ฆwould your little one eat this?
    I eat tons of fruits and vegetables but it is hard to get my two year old to branch beyond green peas, carrots and bananas.
