Weekly Meal Plan

Enjoy this weekโ€™s meal plan! I canโ€™t wait to eat dinner this week:)

Week 13:

Monday (4/13):ย Itโ€™sย National Grilled Cheese Month, so we are having Sweet Potato and Kale Grilled Cheese for dinner! Kettle chips and grapes on the side!

Tuesday (4/14):ย Asian Quinoa Salad-we love this healthy and colorful salad!

Wednesday (4/15):ย Roasted Chickpea Fajitas-veggie fajitas with chickpeas for a nice punch of protein!ย While you are cooking, munch on chips and Strawberry Mango Salsa!

Thursday (4/16):ย Arugula Pasta Salad-pasta night is always a good night!

Friday (4/17): Pear and Blue Cheese Flatbread-this flatbread is loaded with flavor and only takes 20 minutes to make. Makeย Lemon Cookies with Toasted Coconut Frostingย for dessert. Happy Friday!

Saturday (4/18): Josh and Caleb love making and eatingย English Muffin Breakfast Pizzas! I am starting my weekend with a Pineapple Mango Green Smoothie. Eat leftovers or go out for dinner!

Sunday (4/19): Roasted Vegetable Stuffed Shells-cheesy baked pasta is the perfect Sunday dinner. Make a simple green salad to serve on the side andย Balsamic Strawberry Ricotta Shortcakesย for dessert!

  4. Thereโ€™s usually at least one recipe for the week that I select to makeโ€ฆ Not this week thoughโ€ฆ. Iโ€™m doing the entire week! Chickpea fajitas, sweet potato and kale grilled cheese, pear and blue cheese flatbread!!! Yes, yes, yes!!! And the dessertsโ€ฆ Ricotta and lemon anything is a yes!!!!

  5. I recently tried your quinoa enchilada bake which was TO DIE FOR. I havenโ€™t been able to celebrate national grilled cheese day so Iโ€™m hoping I can celebrate with broccoli and cheese grilled cheese โ€“ YUM! I think that Asian Quinoa salad is next on my list. I love this compiled list, so easy for me to get ideas on what to make for a busy week ahead!

    1. Thanks! You are probably pushing it..ha! We appreciate your input! We may do them in the future, but right now we are just sticking to the meal plans!

  7. Just a little unsolicited feedback: I would much prefer if the photos were here with the links, similar to a recipe roundup. Iโ€™m sure thereโ€™s a reason why you donโ€™t do that, be it more page views if people have to click the link to see the pictures or an overload of pictures being inconvenient in some way. Call me lazy, but I skip right over these posts since I know Iโ€™ll have to wait a dozen times for a link to load to see a picture of what is being offered. If you had the pictures in the post, itโ€™s likely Iโ€™d be drawn to click many of the links because they look so tasty!

    1. Thanks for the feedback! I donโ€™t feature photos for every recipe because that would take too long to compile. The meal plans are meant to be super simple!

  8. Looks yummy! Do you plan and/or coordinate recipes on purpose so that they use many of the same ingredients for budget friendly shopping?

    1. I try to feature seasonal ingredients which are usually on sale and easier to find.
