Are you ready for another week of delicious meals? You are going to love this weekโs meal plan. It is filled with good eats! Make one or make them all! Enjoy!
Monday (1/11): Mexican Rice Bowlsโย One of our favorite quick and easy meals! Add your favorite toppings, I am making Mango Guacamoleย to top off our bowls tonight!
Tuesday (1/12): Creamy Tomato Orzo Soupโย This creamy tomato soup is made with Greek yogurt instead of heavy cream, but you will never know it!
Wednesday (1/13): Smashed Chickpea and Avocado Salad Sandwichโย This is my favorite sandwich and my boys like it too! Serve cut up veggies and orange slices on the side!
Thursday (1/14): Creamy Goat Cheese Pasta with Roasted Broccoli and Sun-Dried Tomatoesโย This simple and healthy pasta dish is full of flavor! Serve a simple green salad on the side.
Friday (1/15): Asian Kale Saladโย We love this colorful and healthy salad. For dessert, enjoy my favorite Whole Wheat Oatmeal Chocolate Chip Cookies made with coconut oil!
Saturday (1/16): Start your Saturday with aย Triple Berry Chia Smoothie. Go out for dinner or eat leftovers.
Sunday (1/17):ย Make a loaf of Zucchini Banana Bread. For dinner, enjoy Buttermilk Oven โFriedโ Chickenย and Green Beans with Lemon and Shallots.

I just made the Tomato Orzo Soup and it was amazing! On a scale of 1 to 10, my husband rated it a 10 and thatโs SOMETHING considering he told me when lunch started that he has never like tomato soup. Well done! Iโm also making the Mexican Rice Bowls and the Goat Cheese, Pasta, Broccoli, and Sundried Tomatoes this week. I love, love, love your blog. Itโs truly the only food blog I read. xo
